2007 il Caberlot from magnum bottle 2195... Great wine but would perhaps have been a better pairing with something with even more tannins to handle the super marbled beef

4th dish and main course

BBQ entrecôte, extremely well marbled, luckily it was a small portion as it would have been to heavy otherwise

Wine and Trout

The Montrachet was a great pairing with the food, perhaps although not equally great on its own, very subtle with refined flavors and balance

3rd dish....

Trout with new potato and shrimp sauce, that crispy skin was awesome

The Torres "Mas La Plana" 2009 was a great pairing

Rich with deep flavors, will continue to benefit from again

2nd dish....

Beef tartar and carpaccio with quail egg yolk, the carpaccio was flawless

The Dom Perignon 1990 works well

Superb champagne, fully matured, toasty with great flavors and texture
